酱香酒研究院成立于2019年,由贵州大学酿酒与食品工程学院和夜郎古酒业联合发起,是夜郎古酒整合专家资源组建研究机构的重要项目之一。酱酒研究院是夜郎古酒的酒体设计中心,面向游客开放预约参观。在此,游客可以见证和体验传统酱酒的勾调技艺和独特口感。传统酱酒的勾兑工段共5道工序包括:盘勾酒评审、小型勾兑、大型勾兑、微调(贮存)、检验出库,合计17个工艺操作环节。
